Hearty Rigatoni Bolognese

There’s nothing better than this homemade rigatoni Bolognese for dinner! It’s so comforting and cozy, and hearty!

You’ll love the delicious Bolognese sauce, which is a wonderful meat-based tomato sauce simmered until perfection, tossed with tender rigatoni and, of course, served with a generous sprinkle of freshly grated parmesan!

Prep Time: 15 minutes | Cook Time: 55 minutes | Total Time: 1 hour 10 minutes | Level: Medium

 

INGREDIENTS

  • 8oz Box of ProPasta Rigatoni
  • 1/2 lb Ground beef
  • 1/4 lb Ground Italian sausage
  • 1 Small yellow onion, diced
  • 1 Medium carrot, diced
  • 1 Stalk celery, diced
  • 3 Cloves of garlic, minced
  • 2oz Pancetta, diced
  • 3 tsp Thyme
  • 3/4 Cup red wine
  • 24oz crushed tomatoes
  • 2 Bay leaves
  • 1/4 Cup milk
  • Parmesan, grated
  • Basil, for garnish

INSTRUCTIONS

  1. In a large pot, cook and brown the beef and sausage, remove and set aside.
  2. Drizzle EVOO into pot, add onions, carrots, celery, garlic, pancetta, and thyme, cook for 4-6 min.
  3. Add wine, scrape bottom of pot, simmer.
  4. Add canned tomatoes and bay leaves, return cooked beef and sausage, stir and simmer for 30 min, with the lid partially covered.
  5. Meanwhile, cook ProPasta Rigatoni according to package directions, drain, rinse with cold water, and set aside.
  6. Add milk to pot, stir, then toss in cooked Rigatoni.
  7. Serve immediately with parmesan and basil
